I've spent time cooking in a wide range of kitchens from London to New York and Los Angeles before landing in the Caribbean. And it seems the longer I do it, the more inspired I become. There's a certain magic to cooking and dining.

As a chef, on a regular basis I'm able to prepare something that was made the exact same way 50 years ago, or create something unrecognizable that tastes very familiar. This ability to be both nostalgic and modern on any given day, coupled with the excitement of the dining experience fuels my passion. I see guests thrilled to be having brunch with their best friends, or a couple choosing to celebrate their special occasion. And being allowed to be a part of these moments through food is inspiring. Who doesn't want to make someone happy? My journey is still unfolding, and where I'll end up next is just part of the fun.
